Baked Cinnamon Apple Slices with Creme Fraiche

Hygge. Do you know what it means? It’s the Danish word for creating a cozy atmosphere, and enjoying life. Instead of seeing winter as this cold, dreary season one must endure before finally enjoying winter, they… Well, they enjoy winter, plain and simple!

During a particularly cold and rainy day, I thought about bringing some hygge into our lives. I grabbed some apples, an orange, some cinnamon, and made this delicious and fragrant dish. And since it’s gluten free, most people will enjoy it. Substitute coconut cream for the creme fraiche, and make it both vegan and paleo!

Baked Cinnamon Apples with Creme Fraiche

Baked Cinnamon Apple Slices with Creme Fraiche (gluten free, paleo)

Ingredients (organic recommended when possible)

1 Granny Smith apple
1 Fuji apple
1/2 t to 1 t cinnamon
Juice of 1/2 a large orange
Honey, to drizzle (optional)
Creme fraiche, whipped coconut cream, etc.

Directions

Peel the apples, and slice them into 8th. Toss with the cinnamon, then arrange into a pretty pattern in a 9″ pie pan. Drizzle with the orange juice, and finish with a little honey, if desired.

Bake at 400 degrees for about 30 minutes, or until the apples are cooked through but still firm.
Spoon into bowls, top with creme fraiche, and serve. You can also bake the apples directly into individual bowls.

Serves 2.
