This smoothie calls for coconut and cashew butter instead of banana to thicken it. It’s great for days when you’re out of banana but still want a calorie-rich smoothie. Young coconuts provide healthy fats and electrolytes; the cashew butter and hemp protein provide protein, and the strawberries bring a touch of sweetness and color.
1 young coconut, meat and water
2 cups strawberries
2 tablespoons cashew butter
2 tablespoons vanilla or plain hemp protein (I recommend Manitoba Harvest hemp protein products)
Blend and serve.
